Chicken Pot Pie

 

Chicken Pot Pie is a great comfort food and very versatile. You can go traditional and make a double crust, or even go the extra mile and make individual pies for your family. More often than not I pour the hot chicken filling into a casserole and top the dish with biscuits. It is an easy solution to a very hectic schedule! Try cutting finely grated cheese into your pie crust or biscuit dough, or adding the cheese to the roux for a cheese sauce.  You can really go nuts and switch the chicken for turkey, chickens like it when you do that.

 

* Fresh frozen, canned, or dehydrated veggies are acceptable. The point of this exercise is to make these meals shelf stable.

 

To make Chicken Pot Pie for your family twelve times you will need:

 

12 Tbsp butter or oil 

12 medium onions

6 cups sliced celery

12 cups mushrooms

12 cloves garlic or 3 tsp Garlic Powder

 

Roux

4 Cups butter or oil

4 Cups flour

 

Sauce

24 cups chicken broth

18 cups milk

6 Cups cheese (Optional but really good)

 

24 cups chicken -OR-12 Quarts canned chicken

12 Cups Cubed potatoes

12 Cups sliced carrots

12 cups frozen peas

6 tsp Salt

3 tsp pepper

3 tsp celery seed

3 tsp thyme

 

Chicken Pot Pie Recipe:

 

1 Tbsp butter or oil

1 medium onion, diced

½ cup sliced celery

1cup sliced mushrooms

1 clove garlic or ¼ tsp garlic

1/3 cup butter or oil

1/3 cup flour

2 cups chicken broth

1½ cup milk

½ cup shredded sharp cheddar

2lbs or 1 quart canned chicken

1 cup cubed potatoes

1 cup sliced carrots

1 cup frozen peas

½ tsp salt

¼ tsp pepper

¼ tsp celery seed

¼ tsp thyme

 

*If you are in an emergency situation and you do not have butter then use oil and some butter powder for flavoring.

 

In a skillet heat approximately 1 Tbsp oil or butter and saute onions, celery, mushrooms, and garlic. Push the veggies to the sides of the skillet. Add 1/3 cup butter or oil and 1/3 cup flour to the skillet stirring continuously to make a roux. Cook the roux for two minutes. Add broth and milk stir and cook over medium high heat until sauce begins to thicken. Add the cheese, if desired, vegetables, chicken, and spices. Stir to coat.

 

Place in your choice of crust and bake at 400 degrees until crust is golden and filling is bubbly.  Approx 30 miutes.

 

Options  

 

Crust: You can make a single or double layer crust. I am giving you two crust options that can be made from shelf stable ingredients.

 

Hot-water pastry

 

1/3 Cup boiling Water

2/3 Cup Shortening

2 Cups Flour

3/4 Salt

 

Pour water over shortening; beat until creamy. Cool. Sift flour and salt; add to shortening; mix to soft dough with fork. Wrap in waxed paper and chill before rolling. Makes two 8 inch pastry.

 

To make this twelve times you will need:

 

4 cups water

8 cups shortening

24 cups flour (16 Cups Soft Wheat if available)

9 tsp salt

Oil Pastry

 

2 cups sifted flour

1 tsp salt

1/2 cup oil

5 Tbsp ice water

 

Sift flour and salt. Beat together oil and water till thick and creamy. Pour over entire surface of flour immediately. Mix with a fork to form a ball. Makes two 8 inch pastry.

 

To make this twelve times a year you will need:

 

24 cups flour (16 cups Soft wheat if available)

12 tsp salt

6 cups oil

3 3/4 cup ice water

Buttermilk Biscuits

 

2 Cups flour (I use half wheat, half white)

1 Tbsp baking powder

1/2 tsp salt

1/4 tsp soda

5 Tbsp butter or shortening

1 cup buttermilk

 

Sift flour, baking powder, salt, and soda; cut in shortening till mixture resembles coarse crumbs. Add buttermilk, all at once, and stir till dough follows fork around bowl.

 

Turn out and knead lightly just a few strokes. Roll dough out 1 inch thick. Brush tops with melted butter, fat, or oil. For more fun roll dough 3/8 inch thick and brush with butter. Fold the dough in half before cutting the biscuits for double decker biscuits.

 

To make this recipe twelve times for your family you will need:

 

24 cups flour

12 Tbsp baking powder

6 tsp salt

3 tsp soda

4 cups shortening

12 cups buttermilk
