Barley has been cultivated for about 8,000 years. Today it is the world's fourth largest cereal crop. Barley is most commonly  identified as pearl barley and in that form is used in soups, pilafs, and salads. Pearl barley is barley that has had its nutritious outer bran removed.
 
There are other forms of barley that should be a consideration when it comes to baked goods for your family and food storage.
 
Hulled Waxy Barley is a whole barley grain in its unadulterated form. It is used in breads, cereals, crackers, and suprisingly chips. I have read that when added to flat breads such as tortillas and pita that texture is improved. I am anxious to give it a try.
 
The nutritional benefits of barley are numerous. Not only is it a source of protein, it also contains calcium, iron, magnesium, phosphorus, potassium, sodium, zinc, niacin and folic acid.
