I recently sampled a lettuce wrap with a quinoa, chicken, and vegetable filling  that a friend of mine made and it was fabulous! FABULOUS! I will post the recipe here shortly. It will be a definate addition to my family's menu.
 
Quinoa, pronounced keenwa is usually thought of as a grain, but it is actually the seed of a plant that is related to beets, swiss chard and spinach. Most cereal grains that we are familiar with come from grasses.
 
Not only does quinoa have a nutty delicious flavor, it is highly nutritious. It is rich in folate, a water-soluble B vitamin necessary for the procuction of new cell growth. Folate is also a cancer inhibitor, and helps prevent anemia. Quinoa is also rich in calcium, magnesium, phosphorus and potassium.
 
Quinoa would be an excellent addition to your family diet and nutritional food supply. Check back for recipes!
