I hear all the time from those who refuse to store rye because they do not like rye bread. Traditional dark heavy rye bread is only one of the many breads made with rye. Those who judge the grain by a single loaf of bread are not giving rye a fair shake.
There are multiple loaves of delicious mild breads that have rye as one of the ingredients. There are several recipes on this site that include rye. Rye is a highly nutritious mild tasting grain that does not have the gluten found in wheat. It is an important grain to include in your storage that will help you balance out the high gluten grains that you store. Remember the importance of variety.
Rye is rich in potassium, phosphorus and magnesium. It has a considerable amount of calcium, and sodium, and smaller amounts of iron, zinc, copper, manganese and selenium. Rye is also rich in choline, vitamin A, B6, niacin, thiamin, riboflavin and pantothenic acid. It also has small amounts of vitamin E, K and folate.
Do yourself and your family a favor; store and use rye.
